The encore for the ‘Born to be Authentic – Cooking Show’, presenting the popular Valpadana Provolone PDO cheese, will occur today Melbourne’s Fine Food Australia fair.

Following the success of the first presentation of the cooking show by celebrity chef Luca Ciano on 6th September at the event, the encore will be held today from 12 pm to 2 pm at Stand H26.

Luca Ciano masterfully interpreted the versatility of the PDO cheese, highlighting both mild and strong versions yesterday. The audience at the show was overwhelmed with enthusiasts, who were able to taste Ciano’s creations.

Ciano also provided tips and advice on how to innovatively cook this cheese that is growing to be increasingly popular with Australian consumers. Today’s encore will repeat this for those that missed it the first time.

Participation in Fine Food Australia and the cooking show are two key actions of the ‘Born to Be Authentic – Provolone Valpadana, a PDO cheese from Europe’ project. The project aims to promote the PDO cheese among professionals in the food and beverage sector and expand trade opportunities.

Luca Ciano said his Italian heritage and his mum’s cooking are his main inspiration, along with his global travels, where he is constantly inspired by different ingredients, cooking styles and techniques.

“Provolone Valpadana PDO offers incredible opportunities in the kitchen: today we proposed a Carnaroli risotto with mild Provolone Valpadana PDO fonduta, zucchini flowers & aged balsamic vinegar and a Rotolo of grilled eggplant, Prosciutto di Parma, strong Provolone Valpadana PDO, toasted brioche bread, tomato basil chilli jam.

“I like to wow customers, friends and family with fun and unusual food combinations where possible,” he explained.

Ciano is the host of his TV show, ‘Luca’s Key Ingredient’ on Channel 10. After two decades of international experience in the world’s best kitchens, he chose Australia, where he endorses a range of premium chef-made products that use only the best ingredients.
