We need to think differently about food: world experts

Is the future of our vegetables on our own rooftops? Will we soon go fishing for dinner from a tank in our kitchen? And will meat become a rare treat?

A group of chefs and scientists meeting in Copenhagen this week think the future of the food industry is in the individual’s hands.

If we want to solve the global food shortage, they say we should look beyond the accepted ways of obtaining, preparing and cooking food.

Copenhagen’s inaugural Mad FoodCamp brought together some of the best food experts to work out ways to solve the food security challenge, in a world of 7 billion people that is expanding at a rate food sources can’t keep up with.

Brazil’s Alex Atala believes the thinking about food needs an overhaul before it’s too late.

It’s clear the planet is under huge pressure,” he said.

”Producing meat adds to this pressure, so a balance between proteins, cereals and vegetables must be reviewed.”
