New test method for meat quality with TA-1 textural analyser

Under major government-grant research program, the Scottish Agricultural College (SAC) develops a rapid slice shear force test method to objectively determine the quality of red meat using the TA-1 textural analyser from AMETEK with a wide range of jigs and fixtures. The new test method is easy to implement and can be improved for widespread use across the entire supply chain of meat production.
